Quinoa Pho

Quinoa pho? Yup!

I’m challenged to find ways to eat quinoa, which I want to eat more of. This is my latest concoction, and it’s good! It’s also one of my global food dishes:

  • Vietnamese Pho soup base from Asian Home Gourmet
  • Quinoa from South America steamed separately and added to soup base
  • Yu choi from China (biologically)
  • Grape tomatoes from Mexico
  • White mushrooms from Canada
  • French vinaigrette spice
