Bacon Stir-Fry Quinoa with Mint, Anyone?

Just wanted to share a bit of a crazy concoction I improvised on for supper tonight. Use however much or little you like in your version of the recipe.

  1. Cook quinoa in a rice cooker till ready, then turn off to let cool while you do the rest here.
  2. Dice up fresh grape tomatoes, green onions and mint leaves.
  3. Turn on wok to frying temperature (just above medium for me).
  4. Cut up bacon strips into half inch bits.
  5. Throw into wok and mix around till fried to desired level.
  6. Turn off stove.
  7. Throw in quinoa and mix well.
  8. Throw in all the diced up stuff and mix well.

It’s really good, but I caution against eating too much. Quinoa is potent stuff! You’ll have a lot of energy without having to eat a lot. But at least it’s not like sugar high sort of energy overload or anything like that. If you’re doing anything like marathon training or needing lots of energy in food that tastes and is good, this is for you!

Yes, bacon is good for you. Accept that and your world will be better. 🙂

Tonight on Wok with Tan, who ever said pasta sauce had to be eaten with pasta? Not this guy!

Lately, I’ve been making pasta with tomato pasta sauce, meat, and white mushrooms and baby spinach put in the boiling pot just before I turn it off to soften the two a bit, with more meat and other veggies than I need with my pasta dish. I then the save the extra to eat the night after with steamed white rice, in a new batch of pasta sauce that I heat up together with the cold extras from the fridge, rather than doing it with a microwave.

I then add a fresh batch of green onions and cilantro to give it a touch of zing and aroma, and voilà!

A Better McNuggets Meal

Upgraded McNuggets mealI don’t find McDonald’s Chicken McNuggets to be very filling if I only eat like a six pack. However, I don’t exactly want to be eating 10 or 20 just to be full, either. So recently, I conjured up this quick and easy idea to make a better meal with McNuggets, for the times when I don’t have time to cook a full lunch or meal. It’s my upgraded, upscaled or upcycled McNuggets meal.

Chips and Bok Choy Healthy Snack, Anyone?

Potato chips aren’t exactly considered healthy food. Fair enough. But I’m not against having some enjoyable junk food in a healthy diet.

Bok choy, or Chinese cabbage, isn’t exactly delicious food. Fair enough. But I’m not exactly for eating only healthy foods in a healthy diet.

During my weekly mind opening exercise this week, to help myself stay open-minded, I thought up the idea of combining the two for a fast, easy and healthy snack! It could even be multiplied in size to make a fast, healthy meal, though not one I would advise to be eaten frequently, of course. It’s healthy but not complete, for neither nutritional nor caloric needs.
